We are just getting over the Easter break and the next bank holiday is almost upon us! To celebrate the long weekend. We have pulled together some bank holiday recipes to get you in the summer spirit. They are perfect for chilling in the garden enjoying the sunshine or at the dinner table if a sudden downpour happens!
Bangin'BBQ Sauce
Ingredients
- 1 can of chopped tomatoes
- 1 onion
- 85g of brown sugar
- 3 garlic cloves
- 1 tbsp of tomato purée
- 3 tbsp of vinegar
- 2 tbsp of Worcestershire sauce
- 1 tbsp of lemon juice
- 1 tbsp of olive oil
- 1 tsp of dried chilli flakes (add extra for more bang!)
Method
Heat the oil in a pan and sauté the finely chopped onion until soft.
Add the rest of the ingredients, season with salt and pepper and stir well. Reduce the heat so that the mixture is lightly simmering.
Cook for 15 to 25 minutes, until the sauce has thickened.
Let the sauce cool, add to a blender and blitz for 10-30 seconds depending on the consistency you want.
You can use your spicy BBQ sauce for dipping or coating veggie skewers or spare ribs. Just coat the food in your sauce, add extra chilli flakes and pop on the barbeque. If the weather takes a turn you can also use a grill or oven. Then sprinkle with chopped spring onion or diced roasted peanuts and serve.
You can store the sauce is a sealed container in the fridge for up to 5 days.
Homemade Frozen Yogurt
Have you ever tried freezing a Frube or a Petit Filous with a little stick in it? The result is a brick-like frozen yoghurt. Tasty, but impossible to scoop into a bowl. The trick to making scoop-able frozen yoghurt is adding a bit of sugar, the more you add the softer your final product will be.
For this recipe, we have opted for Greek yoghurt as it makes the final dish extra creamy and gives it a nice sharp taste!
Ingredients
Vanilla Flavour
- 900g of Greek yoghurt
- 20g of honey (roughly 3 tsps)
- 1 tsp of vanilla extract
Flavoured
You can use the above recipe and add in 175g of frozen fruit. Using frozen fruit also means you can eat your fro-yo straight from the mixer! Just look for bags of fruit or smoothie mixes in your local supermarket.
Method
- Combine the yoghurt, honey and vanilla in a mixer.
- If you have an ice-cream maker, add to this and mix for 30-40 minutes. Then freeze for 1-3 hours.
- If you don't have an ice-cream maker, simply place the mix in a sealed container and freeze for 3-4 hours, depending on the desired consistency.
- Remove the container from the freezer 2-3 minutes before serving.
Try topping your fro-yo with stewed apples and cinnamon or fresh berries and dark chocolate for some extra sweetness!
